High-Oleic Sunflowers
Refers to sunflower (Helianthus annus L.) plant varieties which have been bred so their seeds contain 80-90% oleic acid within the oil in those seeds; versus historical average of 20% oleic acid in the oil of traditional sunflower (crop) plant varieties.

To create the high-oleic sunflower, a mutation known as "Pervenet" was obtained via chemical mutagenesis; which acts via D-12 desaturase and D-9 desaturase enzymes.
